Simple, Healthy & Yummmy!
Recipe: Blackstrap Molasses Cookies
Ingredients:
1½ cups (3 sticks) of melted unsalted butter, 2 cups Yummmy Turbinado Sugar, ½ cup Yummmy Blackstrap Molasses, 2 eggs, 4 cups all-purpose flour, 4 teaspoons baking soda, 2 teaspoons ground cinnamon, 1 teaspoon ground ginger, 1 teaspoon salt
Directions:
Add sugar, eggs and molasses to a stand mixer (a hand mixer will work, too); beat at medium speed. Add melted butter and beat until incorporated. In a separate bowl, sift together remaining dry ingredients. Add 1 cup of dry ingredients to wet ingredients and beat at medium speed just until combined. Scrape the sides of the bowl and repeat, one cup at a time, until fully combined with wet ingredients. Cover dough with cling wrap and refrigerate at least three hours or overnight.
Preheat oven to 375°F. Form refrigerated dough into golf ball-sized balls and place 2 inches apart in cookie sheet lined with parchment paper. Bake for 10-12 minutes. Remove from oven; let cookies cool and enjoy!
