Will the noodles stick together?
Dust each sheet lightly with flour, step down thickness gradually, and don’t nest fresh-cut strands — spread or hang them to air-dry briefly. Strands stay separate, no boil-overs.

Can I make gluten-free or egg-yolk dough?
Yes. Gluten-free dough is more delicate, so step down the thickness gradually (don’t skip settings) and it won’t tear. Egg-yolk doughs work beautifully too. Any rollable dough is fair game.
